    Seen a lot of Beef Wellington on here but this is one that I actually would want to go the trouble to find a way to sneak it away from you, eat all of it, and truly suffer the consequences of my actions because this beef welly was worth it.

    I made this once.. came out perfectly, but wife and mom said it was too rare for them to eat. Put it back in the oven and the pastry completely fell apart from the meat, ruining it. It was a £50 cut from my local butcher. I’m still pissed off about it.

    I’ve made this twice with venison backstraps. Might never make it with beef again. The venison is so much more flavorful. If you find it too “gamey” soak it in buttermilk for a few hours before searing.

    I made almost this exact recipe on Friday and was pretty proud of it, but yours looks better. I used Tyler Florence’s recipe. The only difference is his recipe included a cognac cream sauce, which was awesome. I also topped it with shaved truffles. I couldn’t find fresh truffles so I used preserved ones. Imo the preserved truffles weren’t worth the cost. They didn’t have anywhere near the flavor of fresh.

    I tried to post pics, but Reddit denied me because I don’t have enough karma. if only they gave karma for looking at pics and thinking ‘damn, that looks good!’ I guess I’m the only introvert on reddit.

    I’d say you nailed it 100%: mushrooms properly cooked down/dried out, pastry rose and puffed, and most importantly fillet cooked to perfect temp. Bravo!

    So I’ve only tried this one, and while I loved the taste, you could not get those nice slices, so I’ve been thinking about it here and there, and wonder where I went wrong.

    1 – I didn’t use proscuito(sp?) at all, which I’m reading in the comments below is a moisture ‘barrier’, so to speak. I wonder if that’s the sole reason that the beef was just sliding around in a pocket of pastry, so to speak. Phyllo(sp?) dough could do the trick though, should you not want to wrap meat with meat?
